Using up leftovers, its green and healthy!

Mac and I have been very focused on what we are eating lately, which is great. It also means we are spending more on groceries and we need to make sure that none of that goes to waste.

Being green with your food is pretty much the same as any products Reduce, Reuse and Recycle. The healthier you eat the less packaging the food will have (generally speaking.) Then if possible recycle the packaging, or better yet, use cloth produce bags and such and reuse it!

Today however I’m talking about ‘reusing’ food as in using up all your leftovers. There are lots of good ways you can reuse things here are a few examples.

Last week we made some steak, great the first day but cooked med-well so if we had re-heated it…blah too tough for us… I was thinking about what to do and then it came to me, beef barley stew! It was a great use of the steak, kept it tender and healthy!

This week we had left over takeout grilled chicken, great the first day but same problem getting dryer by the day…I made a creamy chicken and veggie ‘pot pie’ with out the pie crust for lunch with the leftovers. It lasted me 2 days!

Here are a few more ideas for ya”

Chicken/Beef:

  • Chicken salad
  • Chicken soup (noodle, dumpling whatever!)
  • Beef Stew/Chili
  • Fajitas
  • Wraps

Veggies:

  • Vegetable soup
  • Tempura Fry them (ok not the healthiest but yummy!)
  • Use the peels for vegetable and chicken stock
  • Mashed Cauliflower
  • Fritatta
  • Omelet
  • Roasted
